Having visited over 50 countries Dan explored countless cuisines. Paired with a passion for outdoors, it was only natural to merge fresh, locally grown produce to craft a world class hot sauce.

OUR PROCESS
We grow chillies using organic methods, nurturing them with natural compost, sunlight and well water/rain water. Hand picked at peak ripeness they create a fresh, flavourful base for our famous ITO PERI hot sauces Itoshima

Homemade Pasta Carbonara
INGREDIENTS: 400g spaghetti, 200g pancetta or bacon, 4 egg yolks, 100g Pecorino Romano, 100g Parmesan, black pepper, salt INSTRUCTIONS: 1. Cook spaghetti in salted boiling water until al dente. 2. Fry pancetta until crispy. 3. Whisk egg yolks with grated cheeses and black pepper. 4. Drain pasta, reserving 1 cup pasta water. 5. Remove pan from heat, add pasta to pancetta, pour egg mixture over, toss quickly adding pasta water to loosen. 6. Serve immediately with extra cheese and pepper.
Roasted Vegetable Medley
INGREDIENTS: 1 zucchini, 1 red bell pepper, 1 yellow bell pepper, 1 red onion, 200g cherry tomatoes, 3 tbsp olive oil, 2 cloves garlic, fresh thyme, salt and pepper INSTRUCTIONS: 1. Preheat oven to 200°C. 2. Chop all vegetables into bite-sized pieces. 3. Toss with olive oil, minced garlic, thyme, salt and pepper. 4. Spread on a baking tray in a single layer. 5. Roast for 25-30 minutes, turning halfway, until golden and tender. 6. Serve warm as a side or over rice.
Lemon Herb Chicken
INGREDIENTS: 4 chicken breasts, 2 lemons (zest and juice), 3 cloves garlic, 2 tbsp olive oil, fresh rosemary, fresh thyme, salt and pepper INSTRUCTIONS: 1. Mix lemon zest, lemon juice, garlic, olive oil, rosemary, thyme, salt and pepper to make marinade. 2. Coat chicken breasts in marinade and refrigerate for at least 30 minutes. 3. Heat a pan or grill over medium-high heat. 4. Cook chicken 6-7 minutes per side until cooked through. 5. Rest for 5 minutes before slicing. 6. Serve with roasted vegetables or salad.
Fresh Garden Salad
INGREDIENTS: 1 head romaine lettuce, 1 cucumber, 2 tomatoes, 1 red onion, 1 avocado, 50g feta cheese, olive oil, lemon juice, salt and pepper INSTRUCTIONS: 1. Wash and chop lettuce into bite-sized pieces. 2. Slice cucumber, tomatoes, and red onion. 3. Dice avocado. 4. Combine all vegetables in a large bowl. 5. Crumble feta cheese on top. 6. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently before serving.
Chocolate Lava Cake
INGREDIENTS: 200g dark chocolate, 100g butter, 4 eggs, 4 egg yolks, 100g sugar, 60g plain flour, pinch of salt, butter and cocoa for ramekins INSTRUCTIONS: 1. Preheat oven to 220°C. Butter and dust 6 ramekins with cocoa powder. 2. Melt chocolate and butter together. 3. Whisk eggs, egg yolks, and sugar until pale. 4. Fold chocolate mixture into egg mixture. 5. Sift in flour and salt, fold gently. 6. Pour into ramekins and bake 10-12 minutes until edges are set but centre is still soft. 7. Turn out onto plates and serve immediately with ice cream.
Hearty Vegetable Soup
INGREDIENTS: 2 carrots, 2 celery stalks, 1 onion, 2 potatoes, 400g canned tomatoes, 1L vegetable stock, 1 zucchini, 200g green beans, 2 cloves garlic, olive oil, fresh parsley, salt and pepper INSTRUCTIONS: 1. Dice all vegetables. 2. Heat olive oil in a large pot, sauté onion and garlic until soft. 3. Add carrots and celery, cook 5 minutes. 4. Add potatoes, canned tomatoes, and vegetable stock. 5. Bring to a boil, then simmer 15 minutes. 6. Add zucchini and green beans, cook another 10 minutes. 7. Season with salt and pepper, garnish with fresh parsley and serve with crusty bread.
